F-15 canopies were tested at least once that I read about with frozen chickens. At an old job, we had an Aviation Weekly subscription.
I think they were supposed to thaw the frozen chickens before firing them at the aircraft with a big air-gun.
A thawed chicken would act more or less like a live chicken, insofar as the collision with the test target is concerned (but a lot less squawking and flapping, I expect).
A frozen chicken would act more like hitting an airborne rock. Big difference.
