Just a few questions should settle this.

1) When was the last time I ate turkey?

2) When was the last time I ate beef Wellington?

3) Can I make a really good turkey myself, or do I at least have a close friend who can?

4) Same as 3), but substitute “beef Wellington” for “turkey.”

Your course should become obvious.

Of course, beef Wellington isn’t all that hard to make. Like turkey, it isn’t always easy to make it in a small amount, and while you can eat leftovers of, or freeze almost anything, beef Wellington will never be the same again. Turkey thaws/reheats nicely.
Unless you are planning a dinner party with beef Wellington in the near future, I’d go with that.
