Central. Most provinces in China rely on pork, chicken, duck, fish and tofu for protein. Muslims obviously replace the pork with lamb and to a lesser extent beef.

Makes sense. I forget but where’s the province you teach at. I always had such a difficult time remembering where all the provinces were. There are so many.
