It’s land-locked, a basin and a plateau with a river between, east of the Tibet Autonomous Region and North of Yunnan.

The only thing I don’t see in recipes is certain kinds of ocean fish and molluscs. Otherwise they’ve got access to pretty much all the meat options, plus tofu.
