I’m a read adherent of Cook’s Illustrated. Apart from what I consider consistently excellent instruction, their product reviews have NEVER let me down. (They accept no advertising, so I take their recommendations pretty seriously.) I was recently steered to the Lodge Logic line of skillets, via their review which rated its performance as better than most other varieties of skillet, nonstick included.

They were right. The entire line is pre-seasoned, so all one has to do is lightly coat with oil after each use. Mine performs perfectly, from searing steaks to frying eggs. (Plus, it’s less than $30.) Normally, I don’t look to inexpensive alternatives — I’m of the “buy the BEST QUALITY you can afford, even if you have to wait” mindset. This is one of those rare cases where the cheaper alternative is superior to most expensive varieties.
