Oh man that stuff is good. I deeply, deeply regret that I can’t get fresh huilacoche where I live. The canned stuff is a shadow of the fresh.

There’s a Hispanic restaurant here that does it well.

But the best was being in Mexico in September. (Minus the salmonella.)
