I did breakfast potatoes for my family this morning to celebrate the kids’ first day of summer vacation. We had small potatoes, I quartered those, heated up last night’s bacon grease that was still in the pan, fried them for about 25-30 minutes, patted them dry and applied Lowry’s seasoned salt. For the kids, I used a glass to cut a hole in a piece of bread, then dropped the bread and the hole into the hot grease with an egg and some salt and pepper to make “egg in the middle of bread”, as they call it - one of their favorite breakfast treats.
