Sounds pretty good. Today I am going to try my luck with a full size roasted duck. The first one I have tried. Looks like a 3-hour roasting, frequent turnovers in the oven.

I have read that duck fat is even better for frying potatoes in than bacon fat, as hard as that may be to believe.
