What are you broiling? There’s a technique for the blowtorch plus a low temperature oven that works great on frozen steaks, you sear the outside and then get perfect rare interior. I bought a Snowpeak Gigapower torch for camping because fuck coming back in the evening to a bunch of soaking wet firewood. It’s been really useful in the kitchen tho too.

In general, nothing. I shy away from recipes that call for the technique because I’m so skeptical of it.

I was going through magazines to pull out the recipes I wanted to try before recycling the rest, and encountered a bunch that required broiling.
